I think they are a great soup veg. I make mine with some grated ginger (not too much, just enough). I add that at the onion stage before the veg and stock. I don't know what I would do without my 'mushing stick' to puree it up.<br />I can't wait for the cooler weather and new pumpkin season to arrive. Last week my hubby bought me the Hairy Bikers diet cookbook (he wants to lose some weight) and I made their veg soup which consists of butternut squash, two parsnips, onion and two carrots... it is gorgeous. I'm making some more today! The best thing about soup is being able to use up old veggies.
