Super Duper Soup

Hello Lovelies, 
After the mild start to January it's turned very cold here this week. Most definitely soup weather.There is something wonderfully comforting about a bowl of steaming hot soup on a chilly day, don't you think ? 
I've always enjoyed good quality ready made soup , but just lately I've started making some of my own too.


 I've only had Butternut squash soup a couple of times before but I LOVED it and wondered if I would be able to make my own.
 Back in December I spotted some of these unusual looking veg ( or should that be fruit........it contains seeds , so that makes it technically a fruit I think ) on offer in the supermarket. I picked it up , confident that the internet would provide me with a recipe. 
Indeed there were lots , but THIS ONE appealed most , due to it's simplicity and beautiful photography. 
I then proceeded to forget all about my plans till yesterday, when the cold snap reminded me of my soupy desires........


As you may have noticed in the picture above, I'm not afraid to use  old veg. The potatoes were sprouting and the squash had gone past it's  "best before" date .

But the still looked yummy once chopped up, and it really was a super quick, easy soup to make.


It turned out just as tasty as I remembered........ creamy ( though it contains hardly any fat ) and sweet ( though not overly so ) and just, well ....really delicious. The recipe made a big pan full , enough for about six servings. It was a big hit all round..........


Butternut Squash as in season from October to December here, but they may still be in the shops. I'll certainly buy another one , and make more yummy, thrifty soup , if I come across them.

Today, after another lunch of my warming soup, I ventured into our rather chilly conservatory to take the pictures for my owl decoration tutorial. I didn't think it would take so long to get around to this but HOPEFULLY next week will be quieter and I'll be able to complete it for you lovelies.......

  3. Pumpkin/butternut soup is the best, a great favourite in our house. I'm sure eating it was one of the many happy moments you've had in your week. I'm not afraid to use up old veges for soup either. I call it dead vege soup. Add some fresh herbs and stock, makes the most delicious soup.

  4. Butternuts are one of my favourite veggies, they are so versatile. Whenever I make butternut soup I like to squeeze an orange into the soup when its cooking, it makes the soup almost perfumed x Penelope

  7. We have butternut squash soup alot as it is high in Vitamin C and generally good for you. Last week my hubby bought me the Hairy Bikers diet cookbook (he wants to lose some weight) and I made their veg soup which consists of butternut squash, two parsnips, onion and two carrots... it is gorgeous. I'm making some more today! The best thing about soup is being able to use up old veggies. This cookbook is brilliant and full of recipes that don't have a huge list of "hard to get" ingredients; its in The Works, have a look if you haven't already. Your home looks lovely and cosy x

  8. Looks tasty! I've never tried squash soup, I'm not even sure they sell squashs here in the netherlands. But I'm going to make some pee-soup (which looks weird but is SOOOO good when it's freezing outside) like this one

  9. Mmmmmm, I love buternut quash soup. I had it as a starter once in our local bistro and they put a sprinkle or chilli flakes, sesame seeds, and a swirl of seasame oil in it. It went from being delicious .... to oh my goodddddnesssssss!!!

  10. I buy butternut squah a lot (and all year round) and use it in all kinds of recipes - it's particularly yummy roasted. With soup I usually add coriander, cumin and ginger to make it nice and spicy, and like you, chuck in any old veg which needs using up. Thick frost on the ground this morning but I'm hoping the predicted snow doesn't make it down this side of the Pennines.

  11. I love butternut squash soup ... Try adding a big dollop of smooth peanut butter at the end after blending and just heat through to melt. Trust me, it's even better and with added protein. Not too fattening either, spread out over the whole panful!

  12. I love to make my own soup, you get so much more for your money than the ready made stuff, and its even yummier!

    I sometimes put it all into the slow cooker before leaving for work, its so nice to get home on these cold, dark evenings to have tea all ready to serve - and it makes the house smell so cosy!

    Or if Im in a rush I just sling it all into the pressure cooker.

    Either way, Im in total agreement with you - so darned delicious and thrifty and healthy too! Whats not to like...

  13. Oh I will have to try this recipe! I normally do butternut squash and roasted red peppers and I've never thought to substitute potato. Thanks for the idea!

  19. Hi Jacquie - I agree with you about yummy soup during the winter months. Our fave by far is curried parsnip - the sweetness of the veg makes a brilliant combination with the curry powder - and so easy to make. The other one we love - just after Christmas, to use up any leftover stilton - is broccoli and stilton - again, really lovely. Enjoy x

  21. That soup looks perfect for the kind of weather we're having right now. I think of it as sunshine in a bowl, the colour is just so sunny!

    It's nice too with some ginger and coconut milk in it, very warming and tasty.

  22. Here in the land of Oz, butternuts are sold as pumpkins. I think they are a great soup veg. I make mine with some grated ginger (not too much, just enough). I add that at the onion stage before the veg and stock. I don't know what I would do without my 'mushing stick' to puree it up.
    I can't wait for the cooler weather and new pumpkin season to arrive. I feel inspired.

    Butternut squash will keep for months in a cool place so I always have at least one in stock. Aldi often sell them at 49p each which makes them super value as well as a super food :-)
